Supreme Orange Sponge Cake

As it gets colder, the market is filling up with fat juicy oranges, and I immediately knew I had to bake my orange favorite. Supreme Orange Sponge Cake is a recipe I first came across on this delightful site called ‘They Draw and Cook‘ (check it out!). I’ve made it about half a dozen times and it turns out wonderfully each time, and the beautiful aroma of orange wafting through the house is just irresistible. I think it would go great with a sugar icing but frankly I’ve never tried it. I’ve put down 8 servings, because this would make at least 8 chunky slices, but frankly my 6 year old and I can polish off half while its still warm!

  • 1 1/2 cups all purpose flour
  • 1 cup white sugar
  • 3 eggs
  • 7 tablespoons orange juice ( 1 orange should be enough)
  • 1 teaspoon orange zest
  • 1 teaspoon baking soda
  • 1 teaspoon salted butter
  • 7-8 walnuts. 4 whole for the top, the rest crumbled (optional)


Step 1

Turn on your oven, and grease your baking tin. About 12 x 4 inches and 5 inches high is what I use.

Step 2

Wash the orange thoroughly and use the smallest file on your grater to make the zest.

Step 3

Cut the orange into half and squeeze the orange juice, strain and set aside.

Step 4

Very carefully separate the eggs. Set aside the whites.

Step 5

Now in a large mixing bowl cream together the yolks, sugar and butter.

Step 6

Add the flour and the baking soda. Mix vigorously. The mixture will be pretty thick; add a little more orange juice if you absolutely have to.

Step 7

Add the small pieces of walnuts if you want and stir vigorously once more. Set aside.

Step 8

Beat the egg whites till stiff. The quickly fold it into the cake mixture.

Step 9

Pour into the cake tin, garnish with the rest of the walnuts and pop it into the oven. Turn the oven right down to low, and wait out 30-40 minutes depending on your oven. Enjoy those awesome citrus aromas floating around your kitchen.

Step 10

Check with a knife. It comes out clean, you're done.

Step 11

Take your tray out of the oven, let it rest for 5 minutes and the slide the cake onto a cooling rack. Enjoy that golden orange delight!
